KMI is pleased to be able to raise these mushrooms, as it is a difficult mushroom to cultivate. The results are a mushroom with dark brown caps, elegant creamy colored stems with a meaty red wine flavor. We think this mushroom can easily be substituted as the center of any pasta meal. Chef Mario at Piatti’s in Denver serves the Black Poplar with veal in a red cabernet cream sauce. It is delicious and pairs well with big red wines.As all with organic exotic mushrooms cultivated in a wood culture substrate, Black Poplar is high in antioxidants, cholesterol-free and high in vitamin D.
